The Story of Genache

A perfect blend of dark chocolate and milk chocolate are melted and mixed together.  The dark chocolate used by PTCC is Belcolade's Standard chocolate at approximately 56% cocoa content.  It offers a perfect balance between bitterness and sweetness.   The milk chocolate is also made by Belcolade and has a pleasant cocoa taste and a sensation of honey.  Both chocolates are made with natural vanilla.

Added to this mixture is a blend of locally procured cream products.

 


Once this has all been manually blended together a batch of whipped egg whites are folded in. This base of genache creates a simple and clean palette to then add the flavors and spices to create the flavors of truffles and fudge PTCC offers.


The process is quite similar when creating a white chocolate based genache.
