PTCC creates exquisite hand made fudge using the finest chocolate and fresh, locally procured ingredients. The fudge base is slowly heated in a large copper pot to approximately 232 degrees. Once it reaches the correct heat in the Savage Cooker it is slowly poured onto a cool granite slab. The remaining ingredients are dolloped on top of the spread out base and are manually mixed in using a tool closely resembling a long handled flat headed "trowel". After being thoroughly mixed together the base chocolate fudge is created. This chocolate fudge is then infused with fruits, spices and other tasty treats. Each fudge is finished with a custom marking after being hand dipped in56% cocoa content dark chocolate.
