The Chocolate Story

Chocolate… like wine, has a rich passionate history with an awe-inspiring variety of flavors, textures and complexity. Not every chocolate is the same, and it does not take an expert to fully realize the amount of flavor the cocoa bean can fulfill. Exquisite chocolate can be fully understood by even the casual taster.


To fully understand the complexity of chocolate, it takes someone that has a passion for confectionery. Lynn took it upon herself to learn every nuance of creating the most sensuous chocolate in the Pacific Northwest. Lynn fell in love with the complete process of creating product.  The beauty of perfectly tempered chocolate appealed to her innovative nature. Her wacky scientist personality flourished in the combining of ingredients for new flavors and product. The fact that each piece is crafted again and again until it is ready for display and purchase fills the creative part of her life. Lynn loves to please people with surprisingly scrumptious flavors.


Lynn understands chocolate. She was mentored by a chocolatier of 15 years, and the Port Townsend Chocolate Company has a history spanning over twenty-five years in the Victorian Seaport of Port Townsend.   Lynn excelled in workshops for tempering, flavoring, and presentation offered by an official Belcolade, internationally trained chocolatier. Collaborating with other chocolatiers in the Seattle region she showed her true entrepreneur spirit by learning quickly and moving forward. Many of the techniques acquired during her years of study include tempering, hand tempering, hand dipping and decorating, making genache from scratch, using a copper kettle, and molding - characters and bars.


Lynn is also a person who loves a challenge, and completely understands retail and the value of providing a consistently tasty product. She acquired the business in May of 2002, on National Worker's Day. A wife, a mother, and a small business owner... her attention to detail gives her an advantage when she takes risks with new flavors and products. She also loves to chat with customers for feedback and ideas, some of her best creations have arrived from customers that offer a different perspective.
 

Lynn has a desire to uphold and expand the tradition of chocolate making on the Quimper Peninsula with a business she can grow which includes the community.  She is a true craftswoman, with her creation of tantalizing truffles, fabulous fudge, colossus coconut clusters, confounding caramel, bafflingly good chocolate bars, cordial cookies, magical mocha sauce, chocolate coated treats and magnetic molded characters... there is plenty of amazing chocolate for you to choose from.
